Kimchi is a traditional fermented Korean side dish made of vegetables with a variety of seasonings. It is one of the healthiest foods in the world.
Included in our itinerary is the opportunity to try out kimchi making.
There are hundreds of varieties made with a main vegetable ingredient such as cabbage, radish, scallion or cucumber. While the most common seasonings include brine, scallions, spices, ginger, chopped radish, garlic, shrimp sauce and fish sauce.
It seems quite a simple process, as all you need to do is to rub the seasonings on the cabbage leaves, have them rolled up nicely, before keeping them in jars to ferment. Sounds simple, right?
